COFFEE GATEAU

Ingredients

4 eggs, separated
125 grams castor sugar
50 grams Muscovado brown sugar
150 grams self-raising flour
15 ml (1 tablespoon) cornflour
25 grams butter
75 ml (5 tablespoons) cold strong coffee.

Filling and Topping

60 ml (4 tablespoons) castor sugar
30 ml (2 tablespoons) Muscovado brown sugar
105 ml (7 tablespoons) cold strong coffee
175 grams butter

Instructions

Grease 2 x 20 cm sandwich tins. Beat egg whites until stiff and dry. Gradually beat in sugars, keeping mixture stiff. Beat well, then add yolks and beat again. Add sifted flour and cornflour. Fold lightly into egg and sugar mixture. Heat butter, cold coffee and fold in gently. Pour into prepared tins and bake for 20 mins at 180° C/ Gas 4

Filling and Topping

Heat sugars and cold coffee together until sugar is dissolved, then allow the syrup to cool. Cream butter until light, then add cool syrup gradually and continue beating until mixture is light and fluffy. Divide the cream in half. Use one half as filling and the other half as topping.
